Zucchini Cake Recipe


Zucchini And Walnut(peacan) Cake

Cook Time: 55 minutes

Ingredients:

  • 1 cup vegetable oil
  • 2 cup sugar
  • 3 eggs
  • 2 tsp. vanilla (I alwaysuse pure vanilla extract)
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 cups grated zucchini (leave skins on)
  • 1 cup walnuts

Preparation:

Mix oil and sugar. Add eggs, one at a time beating well after each addition; blend in vanilla. In a separate bowl, sift together the flour, baking powder, cinnamon, and baking soda. Add sifted dry ingredients to first mixture; alternating with grated zucchini. Fold in chopped nuts. (Batter will be a bit thin.)
Pour into greased and floured 13x9x2-inch pan. Bake at 350° for 55 minutes.
 You can use less oil, I used 3/4 cup of good olive oil.  I also used mixed spice instead of cinnamon. Just for a change.

This is a lovely moist cake. I slice it and freeze the slices sometimes iced other times plain.  

Icing is cream cheese. 
I used 1/2pack cream cheese
Juice of 1/2-1 lemon depending on your like of lemon and how much juice is in the lemon.
You can also add butter.  not sure how much..sorry makes it more soft and flavoursome
One cup of icing sugar, but sometimes I use more..it just depends on how much icing I need and whether I want it thick or more runny.  I beat it all together with my rotary hand mixer.  Till it is creamy and fluffy.

Hello!! Just wondering what your worming treat is for your girls that you mention a few posts back? Always good to compare info on these things :) Also, love your Barnevelders - such beautiful hens! We tried, unsuccessfully, to get some and now we don't have room but maybe one day...thanks for the zucchini cake recipe - always good to have more cake ideas up your sleeve!!

Jaqui regarding the worming treat for my girls Every full moon I make up a mash mix. I put oats, milk that is off, garlic, chilli and let it sit overnight. Okay I will explain it a bit better, I warm the milk and add the oats, like porridge (rolled oats) I let it cool over night and than add chopped garlic (fresh as I grow it) a small amount of chilli, and some kelp powder our soils lack iodine. They get the mash regularly but not always with garlic. They wolf it down. I have been told that if you give it to them warm in winter at night it helps keep them laying eggs.

OOh I make that cake now! I made it for the first time this week and my 18month old eats it in record time...
me too.. I only made a half batch but next time it will be a whole one as the loaf didn't last 24 hours...
mmm. I guess it is the oil that makes it sooooo yummy!
Now I am a bit sad I lost my zucchini to powdery mildew:(

until i started blogging about a year ago, i never really noticed the opposite seasons which i now fully understand. it is so strange that your christmas is in summer and easter leads you into fall. i need two homes on each side of the world so i can always be in fall and winter! blogland is wonderful!
